Ingredients

Chocolate Cake
- 1.667 c Flour
- 0.667 c Cocoa powder
- 1.5 tsp Baking soda
- 0.25 tsp fine sea salt
- 1 c Brown sugar, lightly packed
- 1 Egg, room temperature
- 1 stick Unsalted butter, room temperature
- 1.5 tsp Vanilla extract
- 1.25 c Buttermilk
Cream Filling
- 13 oz marshmallow cream fluff
- 0.25 c Powdered sugar
- 1 stick Butter
Fluffier Filling
- 2 c heavy whipping cream
- 2 tbsp Powdered sugar
- 1 tsp Vanilla extract
- 2 tbsp cheesecake Jell-O pudding

Directions

Preparation
1. Preheat oven to 375° F.
Making the Cake Batter
1. Sift together flour, cocoa powder, and baking soda. Then add sea salt after you've sifted those other ingredients. Set aside.
2. In a stand mixer, cream together butter and brown sugar for 30 seconds on low speed.
3. Increase the speed to high for 3 minutes. Make sure to scrape in between to ensure that the cream and butter become fluffy.
4. Once the cream and butter is fluffy, add your egg and vanilla. Mix that on medium speed for 3 minutes.
5. Next, add in half of the cocoa flour mixture. Mix on low speed until combined. Add all of the buttermilk. Then add the rest of the flour mixture. Mix until combined.
6. Your cake batter should be fluffy and bouncy, slightly thick.
Baking the Cakes
1. Add your cake batter to a prepared cookie sheet. Keep at least one and a half inches in between each scoop.
2. Bake for 11 minutes until the top is bouncy and dry.
3. Let your cakes sit on the cooking sheet for 5 minutes before moving over to a cooling rack to completely cool.
Preparing the Filling
1. Mix your filling ingredients together until fluffy.
2. Place the filling ingredients into a piping bag and pipe onto cooled whoopie pies.
