Ingredients

For the stuffing
- 1 Tbs Olive oil
- 5 clove Garlic, sliced
- 0.5 Onion, chopped
- 2 handful Spinach, washed and disinfected
- pinch Salt flower
For the caramiñolas
- 450 g yuca
- 1 l Water, boiling
- pinch Salt
- 1 Egg, beaten
- 4 Tbs fresh white cheese (panela, cotija, etc)
- 4 Tbs Tomato, diced

Directions

For the stuffing
1. Heat the oil in a pan and add the garlic and onion; cook until softened. Add the spinach, salt and pepper and cook for 5 minutes or until the spinach turns dark green and reduces in size.
2. Place to the side.
For the caramiñolas
1. Boil the yuca until softened, drain and soak. Grate or smash the yuca, mixing with some salt and beaten egg.
2. Knead with your hands until you get a firm texture. Let it rest for 15 minutes.
3. Take portions of approximately 50g of mixture and flatten with your hands. Place some stuffing and cheese in the center and close, sealing the edges carefully.
4. Shape into a croquette and place in a previously floured baking tray. Repeat with the rest of the dough and stuffing.
5. Bake at 180ºC/350ºF for 15 minutes or until golden brown.
6. Serve with tomatoes, share and enjoy.
