Recipe Ingredients
- 1 chicken split breast
- 1 White onion, whole
- 3 Lemons, sliced
- 1 Lemon, juiced
- 3 clove Garlic
- Kosher salt
- 6 tbsp Butter, divided
- Extra virgin olive oil
- lemon pepper
- Paprika
- Italian seasoning

Preparation before cooking
1. Preheat your oven to 375° Fahrenheit.
2. While your oven is preheating, add your cast iron skillet so that it can get hot.
3. While your oven is heating up, season your chicken with all the oil and seasonings.
Starting the cooking process
1. Once your oven is hot, remove your cast iron skillet and place on the stove top.
2. Continue heating your cast iron skillet on medium high heat.
3. Add in extra virgin olive oil and some butter.
4. Once your olive oil and butter is melted, add your chicken skin side down.
5. Place an extra cast iron on top of your chicken to create a nice sear on the outside.
6. Once your chicken is golden brown on one side, flip it over and let it cook for another 5 minutes.
7. After 5 minutes, take it out and set it aside.
Preparing the sauce
1. In the same skillet set to medium heat, add your sliced onions, let those cook down until they are soft and translucent.
2. Season your onions with salt.
3. Then add in your garlic, cloves, lemon juice, lemons and chicken broth.
4. Let that liquid come to a simmer and add in your chicken.
5. Adding a bundle of thyme or rosemary.
Final cooking steps
1. Cover your skillet with foil and place in the oven to cook for another 25 minutes or until the internal temperature of the chicken reaches 165° F.
2. Enjoy!
