Ingredients

- 300 g Cherry tomatoes
- 1 clove Garlic, minced
- 2 tbsp Olive oil
- 1 sprig Fresh rosemary
- salt and pepper, to taste
- 100 g Parmesan cheese, grated
- 100 ml Heavy cream
- 1 c pasta cooking water
- 250 g tortellini
- 100 g Mozzarella cheese

Directions

Preheat Oven
1. Preheat your oven to 350°F (180°C).
Prepare Ingredients
1. Wash cherry tomatoes.
2. Cut the garlic heads in half.
3. Add the rosemary sprig.
4. Add olive oil.
5. Add salt and pepper to taste.
Bake Cherry Tomatoes
1. In a baking dish, combine cherry tomatoes, garlic, fresh rosemary, a drizzle of olive oil, salt, and pepper.
2. Cover the dish with foil and bake in the preheated oven for 45 minutes or until the tomatoes are tender.
Prepare Sauce
1. Remove the baked tomatoes from the oven.
2. Add Parmesan cheese, heavy cream, and a bit of pasta cooking water.
3. Blend the mixture until smooth.
4. Bring the blended sauce to a simmer on the stovetop for 2-3 minutes.
Cook Tortellini
1. Cook the tortellini according to package instructions.
2. Drain the cooked tortellini.
Assemble and Bake
1. In a large bowl, mix the cooked tortellini with the tomato and cheese sauce.
2. Transfer the mixture to a baking dish.
3. Top with a generous amount of mozzarella cheese.
4. Bake at 200°C (390°F) until the cheese is melted and golden brown.
Serve
1. Remove from the oven and let it cool slightly.
2. Serve the baked tortellini hot, and enjoy your delicious and cheesy meal!
