- 3 c Chickpeas, boiled
- 3 Tomatoes, diced and peeled
- 1 Onion, sliced into half moon shapes
- 2 clove Garlic, finely diced
- 1 long green pepper
- 1 Red pepper, chopped
- 1 tsp Chili powder, or to taste
- 1 tsp paprika powder
- 1 tsp Cumin
- 1 tbsp Tomato paste
- 3 tbsp Olive oil
- 1 tsp Salt, or to taste
- 0.5 tsp Pepper, freshly cracked

To prepare the roasted vegetable dish
1. Chop up all the vegetables and combine them in a shallow oven-proof pan with chickpeas, spices, garlic, tomato paste, and olive oil.
2. Mix the ingredients well, then cover the pan with a moist paper and roast in a preheated oven at 395 degrees F for 30-40 minutes.
3. Make sure to mix the ingredients twice and keep the paper moist throughout the cooking process.
4. Serve with fresh parsley and bread.
