- 6 Tinday (Apple Gourd)
Onion
- 1 Yellow onion, Large
Tomatoes
- 2 Tomatoes, Large
Ginger Paste
- 1 tbsp Fresh Ginger Paste
Garlic Paste
- 1 tbsp Fresh Garlic Paste
Cilantro
- 2 tbsp Chopped Cilantro
Garam Masala
- 1 tsp Allspice
Salt
- Salt, to taste
Cumin Powder
- 1 tbsp cumin powder
Turmeric Powder
- 0.5 tsp Turmeric powder
Coriander Powder
- 1 tbsp Coriander Powder
Red Chili Powder
- Red Chili Powder
Oil
- 0.5 Cup mustard oil, or any Veg Oil

Directions

Instructions
1. Pour oil into a hot pan and then add crushed onion.
2. Let it get a little brown as it gives more flavor.
3. Then add in garlic and ginger.
4. Stir for a couple of minutes.
5. Now add tomato purée, stir and let this cook for 5 minutes.
6. Next add the spices and after a couple of minutes add the Tinda (Apple Gourd).
7. Coat the gravy completely before adding in a cup of water.
8. Cover it and cook for 20-30 minutes while stirring occasionally.
9. Once it’s tender and cooked, garnish it with cilantro and a sprinkle of garam masala.
10. Now enjoy it with boiled rice or a warm naan!
