Milkfish Preparation
- 1 Milkfish
- 0.25 c Onions, small dice
- 0.25 c Red bell pepper, small dice
- 2 tbsp pickles, diced
- 1 tbsp Garlic, minced
- 1 tbsp Carrots, frozen, defrosted, small dice
- 1 tbsp green peas
- 1 oz Raisins
- 1 tsp Soy sauce
- 1 tbsp Oyster sauce
- 1 tbsp Ketchup
- 0.5 tsp Salt
- 0.25 tsp Black pepper
- Banana leaf

Preparation of Vegetables
1. Cut all the vegetables and set to the side.
2. Heat up a small pan with oil, then add the garlic.
3. Sauté the garlic until it is fragrant.
4. Add the onions and bell peppers and cook until onions are slightly translucent.
5. Set aside and let cool to room temperature.
Preparation of Fish
1. Using a spoon, take the flesh and fat off of the fish.
2. Reserve the skin for later.
3. Place the fish in a food processor and blend until it is minced.
Mixing the Ingredients
1. Place the minced fish in a bowl, along with the sautéed vegetables, pickles, peas, carrots, raisins, soy sauce, oyster sauce, ketchup, salt, and pepper.
2. Mix thoroughly.
Stuffing and Baking the Fish
1. Place the fish filling back into the fish skin, and fold to resemble a whole fish.
2. Wrap the fish in a banana leaf and bake in a preheated 425*F oven for 20-25 minutes.
Serving the Dish
1. Once cooked, unwrap the fish from the banana leaf, and let cool for 10-12 minutes before slicing.
2. Serve warm.
