Pork Belly and Vegetables
- 2.5 lbs pork belly
- 0.5 large onion
- 10 clove Garlic, crushed
- 3 Tomatoes, large dice
- 1 Asian eggplant
- 0.5 lbs long beans
- 0.25 lbs okra
- 4 taro root
- 1 packet Mama Sita’s Sinigang mix
- 2 c kimchi
- 1 gallon water
- Fish sauce, to taste

Prep the meat and vegetables
1. Wash the taro after it has been cut so it’s not slimy when you peel it.
Heat a large caldero or pot
1. Sear the pork belly on at least 2 sides.
2. Add the onions and garlic and sauté until fragrant.
3. Add the tomatoes and sauté for a minute, then add the water and sinigang mix.
4. Bring to a simmer and cover the pot until the pork belly is tender. About 35-40 minutes.
Once the meat is tender, add the vegetables
1. Add the taro and simmer for 3 minutes.
2. Next, add the okra, and simmer for another 3 minutes.
3. Add the eggplant, long beans, and kimchi and simmer for 5 minutes.
4. Taste the broth to see if fish sauce needs to be added.
Serve and enjoy
1. Serve warm with a side of rice, and enjoy.
