Chop It Up
1. Roughly chop vegetables to fit them in your food processor.
2. Coarsely chop all vegetables and garlic in a food processor. Mushrooms can be made even coarser for a more meaty texture (This will need to be done in batches).
3. Coarsely chop walnuts along with tomato paste until combined.
Cook It Up
1. Add vegetables and mushrooms and continue to cook on medium-high until all the water releases (10-15 minutes)
2. When most of the water has cooked out add seasoning. Cook on medium for another 10 minutes, until all the water fully evaporates.
3. Turn off the heat and add the walnut and tomato paste mixture. Mix thoroughly to combine.
4. Add to your dish of choice. Enjoy!
1. Keeps well in the fridge for up to 5 days or in the freezer for up to 3 months.
