Truffle Fries
- 2 tsp truffle salt
- 4 Russet potatoes, washed
- 2 tbsp truffle oil
- 2 tbsp Avocado oil
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1 tsp Paprika, smoked (optional)
- Salt, to taste
- Black pepper, to taste
- Parsley, fresh, chopped (for garnish)
Garlic Aioli
- 1 c Mayonnaise
- 3 clove Garlic, minced
- 1 tbsp Dijon mustard
- 1 tbsp Lemon juice
- Salt, to taste
- Black pepper, to taste

Spiralize the Potatoes
1. Use a spiralizer to turn the peeled potatoes into thin, curly fries.
Prepare the Truffle Fries
1. In a large bowl, toss the spiralized potatoes and dry them.
2. Add truffle oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
3. Ensure the fries are evenly coated with the seasoning.
4. Form them into little nests.
Fry in Truffle Oil (with a some avocado)
1. Heat avocado and truffle oil in a deep fryer or a large, deep skillet to 375°F (190°C).
2. Carefully add the spiralized truffle fries in batches, frying until golden brown and crispy.
3. This usually takes about 3-4 minutes per batch.
4. Use a slotted spoon to transfer them to a plate lined with paper towels to absorb excess oil.
Make Garlic Aioli
1. In a small bowl, whisk together mayonnaise, minced garlic, Dijon mustard, lemon juice, salt, and pepper.
2. Adjust the seasonings to taste.
1. transfer the spiralized truffle fries to a serving platter.
2. Sprinkle with chopped fresh parsley or chives and truffle salt
