- 4 oz dried knife cut noodles
- 1 tbsp minced garlic
- 1 tbsp chopped scallions
- 2 tbsp Light soy sauce
- 1 tsp Chinese black vinegar
- 1 tsp toasted sesame seeds
- 2 Thai chili peppers
- 1 tbsp Sichuan chili powder
- 2 tbsp heated oil

Preparing the noodles
1. Add noodles to boiling water and cook according to package instructions until they are chewy (around 5 minutes).
2. Drain and transfer the cooked noodles to a bowl.
Preparing the sauce
1. Add 2 tbsp neutral oil to a saucepan and heat until it smokes. Another method is to use a wooden chopstick and dip it in the oil, if the end bubbles steadily, then the oil is ready.
Combining the noodles and sauce
1. To the noodles, add garlic, scallions, soy sauce, Chinese black vinegar, sesame seeds, Thai chili peppers, Sichuan chili powder, and heated oil.
2. Mix until the noodles are all coated with the sauce.
