Directions

Preparation of Salad Ingredients
1. Begin by chopping the romaine lettuce, tomato, avocado, and bell pepper into bite-sized chunks.
2. Thinly slice the red onion into half-moon shapes and marinate in lime juice and salt to soften.
Preparation of Dressing
1. For the dressing, add all the ingredients to a blender.
2. Add just enough water to be able to blend it and reach a creamy consistency.
Assembling the Salad
1. Assemble the chopped romaine, tomato, avocado, bell pepper, corn, and kidney beans in a flat bowl.
