Somen Noodles
- 90 g somen noodles
- 2 clove Garlic
- 0.25 c Tahini
- 1 c Spinach
- 1 tbsp Soy sauce
- 1 tsp Sesame oil
- 1 tsp Sugar
- 0.333 c Hot water
- 1 tsp flax seeds, ground
- 0.5 tsp Sesame seeds
- 0.5 tsp furikake

For the sauce
1. Combine the garlic, tahini, spinach, soy sauce, sesame oil, sugar, hot water, and flax seeds to a food processor.
2. Blitz until smooth.
3. Allow it to sit for a few minutes for the flax seeds to thicken the sauce.
For the noodles
1. Cook noodles according to package instructions. It usually takes 1-2 minutes to boil.
2. Rinse the noodles with cold water.
For the final assembly
1. Transfer the noodles to a bowl and add 2-3 tbsp of the sauce or more if desired.
2. Finish off with sesame seeds and furikake.
