- 2 cauliflower heads
- 2 quarts Canola oil
- 0.5 c Cornstarch
- 0.5 c All purpose flour
- 0.5 tsp Baking powder
- 1 c Milk
- water, additional as needed for batter
- 0.5 c Hot sauce
- 6 tbsp Unsalted butter, melted and kept warm
- 1 tsp Garlic powder
- 1 tbsp Red pepper flakes
- 2 tsp adobo
Blue Cheese Dressing
- 4 oz Blue cheese, broken into crumbs
- 0.5 c Mayonnaise
- 0.5 c Sour cream
- 0.5 c Buttermilk
- 2 tbsp Lemon juice
- Kosher salt, to taste
- Pepper, to taste

Preparation of the oil and batter
1. Preheat oil to 350°F in a Dutch Oven or similar vessel.
2. Whisk together flour, cornstarch and baking powder.
3. Whisk in milk and water to keep the batter fairly thin, add salt, red pepper flakes, garlic powder & other desired seasonings.
4. Mix well and toss cauliflower in the batter, making sure everything is well coated.
Preparation of the blue cheese dressing
1. Make the blue cheese dressing by combining blue cheese, buttermilk, mayo, sour cream, lemon juice, salt and pepper (to taste) in a small bowl.
Frying the cauliflower
1. Fry Cauliflower in small batches, being careful not to over crowd, for about 6 minutes until golden brown.
2. Reheat oil between batches.
Final steps
1. Whisk together the butter and hot sauce and toss your fried cauliflower in it.
2. Serve with your dressing and favorite veggies for extra dipping!
