Tart Crust
- 1.5 cups all-purpose flour
- 0.333 cup Powdered sugar
- Salt, pinch
- 0.5 cup Unsalted butter, cold (or plant-based butter)
- 1 large egg yolk
- 2 tsps heavy cream or milk
- 0.5 tsp Vanilla extract
- 118 ml Milk, (2% or alternative milk)
- 0.333 cup + 2 Tbsps Cornstarch
- 2 tsp agar agar powder
- 0.333 cup Brown sugar
- 1.5 cup strawberry puree
- 0.333 cup Orange juice
To Garnish
- stewed rhubarb chunks
- sliced strawberries

Directions for crust
1. Place flour, sugar and salt into a bowl and mix.
2. Add in the butter in cubes and use a pastry blender or two knives to mix into the dry ingredients.
3. Once the mixture is a coarse meal, add in the egg yolk, heavy cream/milk, and vanilla and mix until the ingredients stick together.
4. Wrap the dough in a disk and chill for an hour.
5. Preheat oven to 350°F.
6. Roll out the dough and press into the tart pans and trim the edges.
7. Place onto a baking tray and cover with foil. Bake for 15 minutes. Remove foil and bake for an additional 5 minutes.
8. Remove and cool before removing from tart tin.
9. Bake tart shell at 350°F for 20 minutes or until golden brown.
Directions for strawberry filling
1. In a pot, add milk, cornstarch and agar agar powder. Whisk well together.
2. Add brown sugar and mix until there's no clumps.
3. Add strawberry puree and fruit juice. Bring mixture to a simmer and cook for 5 minutes while stirring constantly.
4. Pass mixture through a strainer to remove chunks.
5. Pour into prebaked tart shell and gently shake to flatten out. Chill for 2-3 hours.
6. Top with stewed rhubarb chunks and cut strawberries.
7. Slice and serve!
