Ingredients

- 4 Boneless skinless chicken thighs
- 1 c orzo
- 1 Yellow onion
- 2 Celery stalks
- 2 Carrots
- 1 Tomato
- 2 tbsp Fresh parsley
- 2 tbsp Garlic powder
- 2 tbsp Italian seasoning
- 2 tbsp celery salt
- 2 tbsp Paprika
- salt and pepper
- 4 c Chicken Broth

Directions

1. Season chicken thighs with all seasonings above (garlic powder, Italian seasoning, celery salt, paprika, parsley and salt & pepper.
2. Sear chicken in Avocado oil for 5 minutes on each side.
3. Remove chicken thighs from pan and add onion.
4. Add celery, carrots and tomatoes and same seasoning as chicken.
5. Add Orzo.
6. Make pockets within orzo mixture and put chicken thighs back in.
7. Add chicken broth and simmer for 20 minutes.
8. Top with parmesan cheese and parsley and enjoy.
