Ingredients

Spaghetti
- 8 oz Spaghetti
- 1 Onion, finely diced
- 2 clove Garlic, finely diced
- 1 tbsp Tomato paste
- 1 tbsp Oregano
- 1 tsp paprika powder
- 0.5 c Red lentils, thoroughly washed
- 1.5 c Tomato sauce
- 0.5 c water, or veggie stock (add more as needed)
- 1 tbsp Olive oil
- 0.5 tsp Salt, or to taste
- 0.5 tsp Pepper, or to taste
- 0.25 c cashew-parmesan

Directions

Preparing the Lentil Bolognese
1. Heat olive oil over medium-high heat and sauté an onion with a pinch of salt until it's translucent.
2. Then, add some garlic and tomato paste with a little bit of water, and cook for another minute before adding oregano, paprika powder, pepper, red lentils, tomato sauce, and water.
3. Let everything simmer on low heat for about 20 minutes until the lentils are soft. Make sure to check on them and add more water or veggie stock as needed.
Cooking the Spaghetti
1. Meanwhile, cook the spaghetti al dente. Be sure to save some of the salted cooking water.
Combining and Serving
1. Once the lentil bolognese is ready, add the spaghetti and some of the reserved cooking water to the sauce and give everything a good stir.
2. Sprinkle with cashew-parmesan or your cheese of choice. Enjoy!
