- 1 Egg
- 0.33333333333333331 cup sunflower oil, or any neutral oil
- 0.33333333333333331 cup Brown sugar
- 2 Tbs Brown sugar
- 1 Tbs Lemon zest
- 1 cup Whole wheat flour
- 0.5 cup Oatmeal
- 1 tsp Baking powder
- pinch Salt
- 100 g quince paste

1. In a bowl, mix the egg, oil, sugar and lemon zest. Whisk until fully incorporated. Add the dry ingredients: flour, oatmeal, baking powder and salt. Mix until it’s perfectly integrated. At first, the dough may be slightly sticky, but the flour and oatmeal will firm it up.
2. Pre-heat the oven to 180ºC/350ºF.
3. With your hands, form small balls of dough and smash. With your thumb, make a small hole in the middle of each cookie and place in a greased baking tray. Spoon in a tsp of quince paste in the center of each cookie.
4. Bake for 15 to 20 minutes or until the edges start to brown. Remove from the oven and let them cool.
5. Share and enjoy.
