- 1 Tbs Extra virgin olive oil
- Corn chips, to the side
- Mixed vegetables

1. In a bowl, smash the avocados, add the lime juice, olive oil, salt and pepper to taste, until fully incorporated. Add the red onion and mix.
2. Place the guacamole in a bowl and around it, place the carrot, jicama, cucumber and corn chips.
