Chicken and Marinade
- 1 lb chicken
- 4 tbsp extra virgin olive oil
- 2 tbsp sweet paprika
- 2 tbsp honey
- 2 tbsp lemon juice
- 1 tsp ground ginger
- 1 tsp cumin
- 1 tsp salt
- 3 cloves Garlic, minced
Other Ingredients
- 2 red bell peppers
- 2 Fresno peppers
- 0.25 c fresh dill & parsley
- 1 tbsp flour
- 8 oz feta
- 1 avocado
- Basmati rice, to serve

1. Preheat oven to 425F.
2. Line a baking pan with parchment paper, if needed.
Seasoning Mix
1. In a small bowl, mix all the seasonings together.
2. Set aside.
Chicken and Vegetables
1. In a large bowl, combine the sliced chicken, seasoning mix, minced garlic, sliced Fresno peppers, chopped herbs, and 2 tablespoons olive oil.
2. Toss until well combined.
3. Add in the sliced red bell peppers and toss once more.
4. Spread out on the prepared sheet pan.
5. Bake for 20-25 minutes, until chicken is fully cooked.
Crispy Feta
1. To make the crispy feta, toss the feta block in flour then fry in the remaining olive oil over high heat for 2-3 minutes on each side.
1. Enjoy warm with basmati rice, sliced avocado, and more fresh herbs!
