- 4 sourdough bread slices
- 1 Avocado, sliced
- 1 Garlic, tip chopped off
- 1 aubergine
- 1 Red bell pepper
- 1 Yellow bell pepper
- 2 Carrots, peeled, sliced lengthwise
- 0.25 Red onion, thinly sliced
- 1 c Arugula
- 3 tbsp Mustard
- 0.5 tsp Salt, or to taste
- 0.25 tsp Pepper, or to taste
- 0.25 tsp Chili flakes, optional
- 1 Lemon, juiced

Preparation of the vegetables
1. Massage the red onion with lemon juice and salt, then set it aside.
2. Arrange the eggplant, bell peppers, carrots, and garlic on a lined baking tray and drizzle them with olive oil, salt, and pepper.
3. Bake them in the oven at 395 degrees F for about 25 minutes, or until the veggies are soft.
4. Once they're done, let them cool and remove the skin and core of the bell peppers.
5. Squeeze the garlic out of its skin.
Assembling the sandwiches
1. Spread garlic on one half of the toasted sourdough bread and mustard on the other.
2. Add sliced avocado, the roasted veggies, and marinated onions.
3. Season with cracked pepper and chili flakes (optional).
