- 4 clove Garlic, chopped
- 3 Tbs Ginger, chopped
- 6 Shallots, chopped
- 1 cup fennel leaves
- pinch rock salt and fresh black pepper
- 3 Tbs Lemon juice
- 3 Tbs Olive oil
- 1 Tbs Unsalted butter
- 2 mackerel loins
- Oil spray

1. Pre-heat the grill with carbon on medium heat.
2. In a bowl, mix the first 8 ingredients and mix to incorporate and you get a moist mixture.
3. Place the mackerel on a tray and rub with your mixture.
4. Grill the loins, skin side first, cover and let it cook for approximately 15 to 20 minutes, until the skin is crispy and the fish is cooked all the way through.
5. Serve the fish on a large serving plate and take to the table to enjoy.
