Ingredients

- 2 Celery stalks, in diagonal slices
- 1 cup Chards, washed, disinfected and chopped
- 300 g corn flour
- 1 tsp Dried oregano
- 4 Eggs
- 2 cup Milk
- 400 g Mozzarella cheese
- 1 Tbs Olive oil
- 1 Onion, sliced
- pinch salt and pepper
- 1 cup Spinach, washed, disinfected and chopped

Directions

1. In a pan, heat the oil and cook the onion with the celery until they turn translucent. Add the chards and spinach. Cook until they turn bright green and reduce in size. Season with salt, pepper and oregano. Place to the side.
2. In a bowl, beat the eggs with the milk until homogenous. Stir in the corn flour and whisk until you get a soft mixture, with no lumps. Stir in the greens and cheese.
3. Pre-heat the oven to 180ºC/350ºF.
4. Place the mixture in a greased baking tray or mold and bake for 30 minutes or until golden brown. Remove from the oven and let it cool for 5 minutes before serving.
5. Share and enjoy.
