- 1 Tbs Olive oil
- 2 clove Garlic, chopped
- 0.5 Onion, chopped
- 1 Tbs Tomato paste
- 1 Tbs Sweet paprika
- 0.5 tsp Turmeric
- 6 cup Vegetable stock
- 2 Bay leaves
- 2 Zucchinis, in half-circle slices
- 1 Potato, diced and cooked
- 2 cup Haricot beans, cooked
- pinch salt and fresh black pepper

1. Heat the olive oil in a heavy-bottom pot, add the onion and garlic and let them soften. Add the tomato paste, paprika and turmeric and mix. Pour in the vegetable stock, bay leaves, zucchini, potato and beans. Bring to a boil and cook for 10 minutes.
2. Transfer some of the stock, potatoes and beans to the blender and blend until soft. Return this blend to the pot and stir continuously for 10 minutes until the stock thickens.
3. Serve garnished with some olive oil lines and fresh black pepper.
