Ingredients

Main Ingredients
- 1 tbsp Oil
- 2 cloves Garlic, minced
- 2 Chicken breasts, cut into small chunks
- 1 cup kimchi
- 2 tbsp kimchi juice
- 0.25 cup roasted seaweed
- Green onions, chopped for garnish
Chicken Marinade
- 1.5 tbsp Soy sauce
- 1 tbsp Gochujang
- 1 tbsp Sugar
- 1 tbsp Sesame oil
- 0.5 tsp Salt

Directions

1. Add chicken chunks and all the chicken marinade ingredients in a bowl and mix until well combined. Marinate the chicken for at least 10 minutes.
2. Heat 1 tablespoon of oil in a non-stick pan or skillet over medium heat. Once the skillet is hot, add the marinated chicken and cook for 3-4 minutes until chicken is fully cooked.
3. Remove the cooked chicken from pan and set aside.
4. In the same pan, add the minced garlic, kimchi, and kimchi juice. Saute on medium heat for 30-40 seconds, until fragrant.
5. Add the cooked rice and use a wooden spoon or spatula to break apart the rice and get rid of any clumps.
6. Add the roasted seaweed (if using), and cook for a couple of minutes until each grain of rice is evenly coated with the sauce.
7. Taste the fried rice to check if it’s flavorful enough. Depending on the brand of the kimchi and how long it’s been fermenting, its taste could vary slightly. Adjust the taste to your liking and consider adding a little more sugar, soy sauce, or Gochujang, if desired.
8. Plate the fried rice and sprinkle some chopped green onions on top. You can also add a sunny-side-up egg on top because it pairs wonderfully with this fried rice.
