Shrimp Roll
- 1 lb Shrimp, small 51/60
- 0.5 lb Bacon, sliced into strips
- 1 Onion, small dice
- 6 clove Garlic, minced
- 0.5 c Mayonnaise
- 1 tbsp calamansi juice
- 1 packet Sazon with achiote
- 1 tbsp smoked fish flakes
- 2 Hard Boiled Eggs, diced
- Garlic Cornic
- Chives, small rounds, as needed
- 1 tsp Fish sauce
- 0.5 tsp Black pepper
- 6 hot dog buns, split top
- Butter, as needed

Prepare the onions, garlic and bacon
1. Put bacon strips in a pan and render the fat on medium low heat.
2. Once the bacon is crispy, remove from pan and set aside.
3. Drain the oil from the pan, but leave about a tablespoon worth of fat.
Sautee the onions, garlic and shrimp
1. In the same pan, saute the onions and garlic until the onions turn slightly transparent.
2. Add the shrimp, and season with fish sauce and pepper.
3. Saute until the shrimp is cooked.
4. Set aside to let it cool down a bit.
Prepare the dressing
1. In a bowl, add the mayo, calamansi juice, sazon, and fish flakes.
2. Mix well.
3. Add the bacon and cooled shrimp.
4. Toss well in dressing, then let marinate in refrigerator for 30 mins.
Prepare toppings
1. Prepare the hard boiled eggs, chives, and cornic
Assemble the sandwich
1. When you’re ready to serve, toast your buns with butter on both sides.
2. Scoop the shrimp into the buns and top with the egg, cornic, and chives.
