Ingredients

- 1 Tbs Olive oil
- 2 cup Lentils, cooked
- 2 clove Garlic, sliced
- 1 tsp Dried basil
- 1 tsp Dried thyme
- 1.5 cup Tomato sauce
- 1.5 cup Mushrooms, sliced
- 1 cup Mozzarella cheese, sliced
- 0.5 cup Parmesan cheese, grated

Directions

1. In a wide pan, heat the olive oil and add the lentils, garlic and dried herbs. Cook for a minute while stirring to integrate the flavors and let the garlic loose some of its raw taste. Pour the tomato sauce and bring to a boil. Simmer for 3 minutes or until it lightly thickens.
2. Pre-heat your oven to 180ºC/350ºF.
3. Lightly grease a baking dish with butter and place a thick bottom layer of mushrooms. Then add a layer of lentils, a layer of mushrooms and top with a last layer of lentils. Sprinkle the top generously with cheeses. Bake for 20 to 30 minutes or until the lentils are hot and the cheese has melted and browned.
4. Serve immediately, share and enjoy.
Tip:
1. You can use other vegetable trimmings for this dish, like zucchini, eggplant, carrot or any other vegetable that you like.
