Ingredients

- 1 tbsp Olive oil
- 1 Onion
- 2 Carrots
- 2 Potatoes
- 6 Mushrooms
- 1 Broccoli
- 2 Boneless skinless chicken breasts, cooked
- 1 tbsp White wine
- 2.5 c Vegetable stock, reduced-sodium
- 0.25 c Cashews, raw, soaked overnight
- 1 Full-fat unsweetened coconut milk
- fine sea salt, to taste
- Black pepper, to taste

Directions

Preparation of Vegetables
1. Chop the onion, carrots, and potatoes into bite-size pieces.
2. Cut the base off of the mushrooms, and separate using your hands.
3. Cut the florets off of the broccoli, and chop the stem into bite-size pieces.
4. Chop the chicken breast into bite-size pieces.
Starting the Stew
1. Heat the olive oil in a pot over medium heat.
2. Add the onion and sautée for 3-4 minutes.
3. Add the mushroom and sautée for an additional 3-4 minutes.
4. Add the white wine and deglaze the pot.
Adding the Vegetables
1. Add the carrots and potatoes and sautée for 5 minutes.
2. Add the chicken and broccoli, sauté for a minute and pour in the vegetable stock.
3. Once it reaches a boil, simmer for 15 minutes.
Preparing the Cashew Cream
1. While the stew is simmering, add the raw cashews and coconut milk to a blender or food processor and blend until smooth.
2. Add it to the pot and simmer for another 10 minutes.
Tasting and Seasoning
1. Taste the stew for salt and pepper.
2. You may or may not need any seasonings depending on how strong your vegetable stock is.
