- 0.5 c Unsalted butter, 113g
- 0.25 c Granulated sugar, 55g
- 0.5 c light brown sugar, packed, 100g
- 2 Eggs, cold
- 1 tsp vanilla
- 3 Bananas, extra ripe, mashed, about 400g
- 1.75 c All purpose flour, 195g
- 1 tsp Baking soda
- 0.5 tsp Salt
- 0.5 c Sour cream, 120g, can be substituted with yogurt
- 0.5 tsp Cinnamon, + 1 tablespoon sugar for the cinnamon crunch (optional)

1. Preheat oven to 350F and prep a loaf pan with parchment paper and butter.
Making the batter
1. Melt the butter in a nonstick saucepan and stir over medium-low heat until it melts.
2. Turn the heat to the lowest flame, add the granulated and brown sugars, and stir for 1-2 minutes.
3. Remove from heat and wait 5 minutes.
4. Then add the eggs and vanilla and whisk for 1-2 minutes until a smooth, silky mixture forms.
5. Add the mashed bananas and mix until combined.
6. Sift in the flour, baking soda and salt, and fold gently until mixed in.
7. Lastly, fold in the sour cream.
Final Steps
1. Pour the batter into the prepped loaf pan, and sprinkle over the cinnamon sugar mixture.
2. Bake for 50 or so minutes until the banana bread is cooked through.
3. Rest for 20 minutes in the loaf pan before turning out and enjoy!
