Butternut Squash Preparation
- 1 Butternut squash
- 2 tbsp Honey
- 0.5 tsp Cayenne pepper
- 1 tsp Kosher salt
Soup Base
- 1 stick Butter
- 2 tbsp Olive oil
- 4 Carrots, chopped
- 2 sweet onions
- 4 clove Garlic
- 4 c Chicken Broth
- 1.5 tbsp Pure maple syrup
- 0.5 tbsp Cinnamon
- 0.5 tbsp Nutmeg
- 0.25 tsp Cayenne pepper
- Kosher salt, to taste

Preparation of Butternut Squash
1. Heat oven to 400 F.
2. Using a sharp knife, cut your butternut squash in half and remove the seeds.
3. Season with cayenne and salt. Then brush with honey.
4. Place on parchment paper face down and roast for 40-60 minutes until fork tender.
Preparation of Soup Base
1. While your butternut squash is cooking, prepare your soup base.
2. Heat a stock pot to medium heat and add a stick of butter and olive oil.
3. Add chopped carrots, onions and stir constantly until softened.
4. Add salt, cinnamon, nutmeg and stir.
Combining and Cooking
1. Add roasted butternut squash, chicken broth, maple syrup, and cayenne pepper.
2. Mix everything together.
3. Once everything has softened, use an immersion blender, blend well to a soup-like consistency.
4. Taste your soup to make sure that it is to your liking. Add salt, pepper or more spice.
5. Let your soup cook for about 20 -30 minutes on low heat, stirring occasionally.
