Main Ingredients
- 2 tbsp Avocado oil
- 1 Red bell pepper, diced
- 1 Small onion, diced
- 2 clove Garlic, minced
- 2 c Black beans, cooked, with liquid
- 0.25 c Salsa Lizano
- 3 c leftover cooked rice
- 0.25 c Fresh cilantro, chopped

Preparation of peppers, onions, and garlic
1. Heat oil in a large skillet over medium-high heat until shimmering.
2. Sauté the peppers and onions until peppers are soft and onions are translucent, about 6-8 minutes.
3. Add minced garlic and cook for 1 minute, until fragrant.
Adding beans and seasoning
1. Add black beans with the liquid, and Salsa Lizano, stirring to combine.
2. Add the cilantro at this point, or reserve for the end and mix in before serving for a fresher taste.
3. Simmer for 5 minutes, until slightly thickened and a little bit of the liquid is evaporated.
Final steps
1. Gently stir in cooked rice and cook until heated through and most of the liquid is absorbed, about 3-5 minutes.
2. Top with fresh cilantro.
3. Optional, add a fried egg and top with your favorite seasoning.
