- 0.5 lb colossal shrimp
- 3 tbsp arrowroot starch
- 1 egg white
- 0.5 tsp salt
- 0.25 tsp black pepper
- 0.25 c mayo
- 1 tsp lemon juice
- 1 tbsp honey
- 1 tbsp coconut condensed milk
- 1 c coconut flakes

1. In a bowl, whip the egg white until foamy.
2. Add the arrowroot starch, salt, and pepper to the whipped egg white. Whisk to combine.
3. Crush up the coconut flakes into smaller pieces.
4. Pat dry your shrimp and dip it in the egg white mixture and then into the coconut flakes. Press the coconut flakes firmly on the shrimp.
5. Heat up neutral oil (I use avocado oil) over medium heat and shallow fry until golden brown on both sides. Allow shrimp to drain on a cooling rack or paper towel-lined plate.
6. In a medium sized bowl, mix together the mayo, lemon juice, honey, and condensed milk.
7. Add shrimp to the sauce and toss to combine. Enjoy immediately.
