- 1 Whole chicken, cut in pieces
- pinch salt and pepper
- 2 Tbs Olive oil
- 0.25 cup White wine
- 0.5 cup Maple syrup
- 0.25 cup Dijon mustard
- 4 Rosemary, twigs
- 1 cup Chambray potatoes
- 1 cup Dried peas, cooked in water
- 0.5 cup Dried Cranberries

1. Pre-heat the oven to 180ºC/350ºF.
2. Season the chicken with salt and pepper. Heat the olive oil in a wide pan that is oven-proof. Sear the chicken pieces until golden on both sides and the skin is crispy. Remove from the pan. Add the wine to deglaze the pan. Add honey and mustard and mix until fully incorporated. Return the chicken to the pan, skin-side up.
3. Lay the rosemary, potatoes, peas and cranberries and cover with foil. Bake for 20 to 25 minutes or until the chicken is cooked in the center and comes up to 74ºC in the center.
4. Serve each piece with sauce, peas and cranberries.
1. Baking time is greatly reduced if the chicken is cooked in pieces, instead of whole. It also helps to ensure that all the pieces cook evenly and don’t dry up.
