Ingredients

Salad
- 4 cups Kale, lacinato, chopped
- 1 c Romaine lettuce, chopped
- 1 c vegan bacon
- 2 tbsp hemp seeds
Roasted Chickpeas
- 2 c cooked chickpeas
- 4 tbsp Coconut aminos
- 0.25 tsp garlic granules
- 0.5 tsp Paprika, smoked
Caesar Dressing
- 0.5 c raw cashews
- 0.25 c + 3 tbsp water
- 2 tbsp Lemon juice
- 2 tbsp Nutritional yeast
- 0.25 tsp dulse flakes
- 2 clove Garlic
- 1 Medjool date
- 0.25 tsp Pepper
- 1 tsp Salt, or to your taste
- 0.5 tsp Parsley

Directions

Prepare the dressing
1. Combine all the ingredients in a high-speed blender and blend until smooth.
Roast chickpeas
1. Spread rinsed chickpeas on a baking sheet.
2. Bake at 400F for 15 minutes.
3. Remove from the oven and add coconut aminos and seasonings, mix.
4. Continue to bake for an additional 10 minutes or until chickpeas are dry and a little sticky.
5. They will become more crunchy as they cool.
Prepare the salad
1. Combine greens for the salad, add some dressing and toss.
2. Top with chopped mushroom bacon, chickpeas, hemp hearts, and extra dressing.
3. Enjoy!
