- 0.25 c White wine vinegar
- 1 Shallot, minced finely
- 0.5 tsp Black pepper, cracked
- 1 tbsp tarragon
- 2 Egg yolks, from large eggs
- 12 tbsp Unsalted butter, melted
- Salt, to taste

Directions

Steps for Sauce Preparation
1. To a small sauce pan add the white wine vinegar, shallots, tarragon & pepper. Bring it to a simmer and then reduce it by about 70%.
2. Transfer the shallot mixture to the top of a double broiler and bring the pot underneath to a light simmer. Then add your 2 egg yolks and whisk together the eggs and shallot mixture until it almost doubles in size.
3. Slowly stream in your melted butter while whisking to temper the eggs. Don’t add too fast you don’t want to scramble the eggs.
4. Lastly, add salt to taste and give it a good mix before transferring it to a serving dish. You want the serving dish to be warmed so that way the sauce doesn’t get clumpy and cold.
