- 2 c all-purpose flour
- 1.5 c Cane sugar
- 0.5 c Avocado oil
- 0.25 c Cocoa powder
- 2 c Zucchini, shredded
- 2 tsp Vanilla extract
- 1.5 tsp Baking soda
- 1 tsp Salt
- 1.25 c bitter-sweet chocolate chips

1. Preheat oven to 350°F. Grease a 9x13 baking pan with cooking spray.
2. Place the flour, sugar and oil in a large bowl and blend with an electric mixer or whisk.
3. Once the oil and sugar are well incorporated into the flour, add the cocoa powder, shredded zucchini, vanilla extract, baking soda and salt.
4. Continue to blend with the electric mixer until well combined.
5. Fold in one cup of the chocolate chips.
6. Pour brownie batter into prepared baking pan and sprinkle remaining chocolate chips on top.
7. Bake for 28-32 minutes or until a toothpick comes out clean and the brownies pull away from edges of the pan.
8. Cool completely on a wire rack.
9. Cut brownies into squares and serve.
