Ingredients

- 1 1 lb bag small potatoes
- 0.25 cup Olive oil
- 2 bunch Fresh rosemary
- Salt, (to taste)
- Pepper, (to taste)

Directions

1. Preheat oven to 400F degrees. Bring a large pot of water to boil. Boil potatoes for 20 minutes or until potatoes are tender.
2. Line a large baking sheet with parchment paper. Add 1 tsp of olive oil to parchment paper and brush the basking sheet. Place potatoes on baking sheet.
3. Using a measuring cup or a small bowl and gently smash the potatoes. Drizzle olive oil, rosemary and salt + pepper over the potatoes.
4. Bake for 20-25 minutes or until potatoes are crispy.
5. Serve and enjoy! xx
