Ingredients

For the French onion sauce
- Vegetable oil, or Canola oil
- 4 tsp All purpose flour
- 2 large yellow onions
- 2 large red onions
- pinch Kosher salt
- 5 tbsp salted butter
- 5 clove Garlic, minced
- 2 tbsp Olive oil
- 0.25 c Red wine
- 0.333 c Red wine
- 0.5 c beef broth
For the chicken thighs
- 4 Boneless skinless chicken thighs
- 4 Potato Buns, toasted
- 4 slices Pepperjack Cheese
- 1 tbsp Black pepper
- 2 tbsp Garlic powder
- 2 tbsp Onion powder
- 2 tbsp Smoked paprika
- 1 tbsp Ginger
- 1.5 c Potato starch, or all purpose flour
- 1 c white rice flour
For the Wet Batter
- 0.5 c All purpose flour
- 1 l Club soda

Directions

Preparing the Onion Mixture
1. In a medium saucepan, heat on medium heat.
2. Add two tbsp of olive oil and then 4 tbsp of butter to the pan.
3. Once the butter melts, add the onions and a pinch of kosher salt.
4. Stir in the salt and butter to the onions, reducing the heat to low.
5. Cover the pan with a lid and let simmer for 45 minutes to an hour checking on the pan occasionally to avoid the onions burning.
6. As the time passes, the onions will caramelize.
7. Once it browns, add the cloves of garlic and mix.
8. Add the red wine and cook until the alcohol is reduced.
9. Add the beef broth.
10. As the broth begins to reduce, immediately add the all purpose flour.
11. Mix in until there is no trace of flour.
12. Turn the heat off and add the last tbsp of butter emulsifying into the onion mixture.
Preparing the Chicken
1. In a large pan (like a cast iron or frying pan) add enough oil to cover the pan about 2/3 of the way.
2. Season the chicken thighs with salt and pepper.
3. In one bowl, add the potato starch and white rice flour with your seasonings.
4. In another bowl, add the flour and club soda. Mix until you get a thin batter enough to coat the chicken but not too thick.
5. Add the seasoned chicken to the dry batter, then the wet batter, and then to the dry batter patting down to coat the chicken.
6. Once your oil reaches 350 degrees, add your chicken thighs cooking in batches.
7. Cook 4-5 minutes per side or until the chicken is fully cooked at 165 degrees.
Assembling the Sandwich
1. Assemble your sandwich with your toasted bun, condiments of choice (I prefer spicy mayo), onions, your chicken thigh, melted pepperjack cheese, more onions, and the top bun also with your condiment of choice.
2. Serve immediately and enjoy.
