Muffin Batter
- 2 c All purpose flour, sifted
- 1 c Granulated sugar
- 2 tsp Baking powder
- pinch sea salt
- 2 Large eggs, room temperature
- 0.5 c Unsalted butter, melted
- 0.5 c whole milk
- 2 tsp Vanilla extract, pure
- 2 c Blueberries, fresh, rinsed and drained
- 0.25 c All purpose flour
- 2 tbsp light brown sugar
- 2 tbsp Granulated sugar
- 1 tsp Cinnamon
- 2 tbsp Unsalted butter, cold
- 0.25 c uncooked rice

1. Preheat your oven to 400 degrees.
2. Add rice to your muffin pan in each space.
3. Add your muffin liners to the pan.
Preparing the Muffin Batter
1. In a large bowl, mix your dry ingredients (flour, sugar, salt, and baking powder).
2. In a separate bowl, mix in your eggs, milk, melted butter, and vanilla extract.
3. Add the wet ingredients into the dry ingredients until well combined.
4. Fold in your blueberries and set aside.
Preparing the Streusel Crumble
1. In a separate bowl, add the flour, brown sugar, granulated sugar, and cinnamon.
2. Use a fork or pastry cutter to mix the butter to form crumbles.
Assembling and Baking
1. Add the batter into the muffin liners then top with the streusel crumble.
2. Bake for 18-22 minutes or until you can stick a toothpick in clean.
3. Let cool before eating.
4. Serve and enjoy!
