- 1 tbsp Avocado oil
- 0.5 c Onion, chopped
- 0.5 c peppers
- 0.25 c Cilantro, chopped
- 1 tbsp spanish olives
- 0.5 c ham
- 2 tsp Healthy Rican Adobo
- 2 tsp Healthy Rican Sazón
- 1 tbsp Healthy Rican Sofrito
- 1 15 oz. can green pigeon peas
- 3 c water
- 3 c jasmine rice
- banana leaves

Preparation of Ingredients
1. In a large pot, add the chopped onion, peppers, cilantro, ham, olives, and seasonings and mix well.
2. Add the pigeon peas, rice and water, and allow it to come to a boil.
3. The liquid should be approximately 1/4 inch above the rice.
4. At this point, try the liquid to make sure the flavor is to your liking.
5. Add additional seasonings or salt to taste if needed.
Final Cooking Steps
1. Once the liquid boils and the liquid evaporates a little, mix well, cover and reduce the heat to low.
2. A banana leaf can be added on top and then the cover. This just adds a bit of extra Caribbean flavor.
3. Allow to cook for 20-25 minutes approximately until the rice is fluffy and completely cooked through.
