Pickled Cabbage
- 0.5 Red cabbage, head
- 0.25 white cabbage, head
- 3 c water
- 1.5 c vinegar
- 1 tbsp agave
- 0.5 tbsp Salt, + 1 tsp
- 1 tsp mustard seeds, optional
- 1 tsp Coriander seeds, optional
- 0.5 tsp white peppercorns
- 0.5 tsp Black peppercorns, optional
- 2 Bay leaves, optional

Preparing the Cabbage
1. Remove the outer cabbage leaves and the core.
2. Thinly shave the cabbage with a mandoline (if you don't have one, use a knife).
3. Combine the cabbage with 1 tsp of salt in a mixing bowl. Lightly massage the cabbage.
Preparing the Pickle Brine
1. In a large pot, combine the vinegar, water, sugar, salt, and spices.
2. Bring to a boil over medium-high heat, stirring until the sugar and salt are fully dissolved.
3. Let it sit for a little while to infuse the brine with the spices.
4. Strain out.
Pickling the Cabbage
1. Add the shaved cabbage to a sterilized jar and pour the pickle brine over it.
2. Let cool.
3. Move into the fridge.
4. After 2–3 days, you will have the perfect pink color.
5. Enjoy it within one month.
