Tart shell Ingredients
- 130 grams Butter, soft
- 120 grams Powdered sugar
- 1 tsp Vanilla extract
- 30 grams Eggs
- 200 grams pastry flour
Sweet potato filling
- 200 grams Sweet potato, peeled, cubed and steamed
- 50 grams Sugar
- 15 grams Maple syrup
- 20 grams Butter
- 1 Egg
- 25 grams Cream
Meringue ingredients
- 100 grams Egg whites
- 100 grams icing sugar
- 100 grams white sugar

1. For the tart shells, mix the butter and icing sugar. once thoroughly mixed, mix in the eggs and vanilla extract. Mix the flour and knead until just combined. Set in the fridge for at least an hour.
2. For the sweet potato filling, steam your sweet potatoes until they are very soft. While warm, mix with all the ingredients in a food processor until smooth. Set in the fridge for 30 minutes.
3. Next, roll out the tart dough and place in tart molds. Bake at 350F for 10 minutes with baking beans to weigh it down.
4. After 10 minutes, pipe in the sweet potato filling and bake for another 10-15 minutes. Let cool.
5. To make the meringue, heat and mix all the ingredients together over simmering water until it reaches a temperature of 80F. Once it was, whip on high speed until it is stiff peak.
6. Pipe on top of pies with a pastry bag and star tip. Toast with a blowtorch and enjoy!
