- 1 cauliflower
Spice Rub
- 0.25 c Olive oil
- 2 tbsp za’atar
- 4 clove Garlic, crushed
- 0.5 tsp Salt, or to taste
Tahini-Lemon Sauce
- 0.5 c Tahini
- 0.25 c Lemon juice, fresh
- 1 clove Garlic, optional
- 0.5 tsp Salt, or to taste
- water, as needed

Preparing the Cauliflower and Spice Rub
1. Clean the cauliflower and remove its leaves.
2. To make the spice rub, mix olive oil, za'atar, crushed garlic, and salt.
3. The amount of ingredient you use will depend on the size of your cauliflower, so make sure it's well coated and save about 1/3 of it for later.
Cooking the Cauliflower
1. Once you've prepared the cauliflower, place it in a Dutch oven with water at the bottom and cover it with a lid so that it can steam.
2. Cook it for around 35 minutes at 430 F until it's almost done. You can test it with a knife or skewer.
3. Then, add the rest of the spice mixture on top of the cauliflower and roast it without the lid for another 10-15 minutes until it's nicely browned.
Making the Lemon Tahini Sauce
1. To make lemon tahini sauce, simply whisk together (or blend) 1/2 cup tahini paste, 1/4 cup fresh lemon juice, optionally 1 clove minced garlic, and 1/2 teaspoon salt.
2. Add water little by little until the sauce reaches your desired consistency.
3. Some people prefer a thinner sauce, while others like it thicker.
4. Taste the sauce and adjust the seasoning as needed, adding more salt or lemon juice to taste.
Serving the Dish
1. Finally, serve the whole roasted cauliflower with the tasty tahini-lemon sauce drizzled on top.
