- 1 Butternut squash
- 1 Sweet potato
- 1 Carrot
- 1 Red onion
- 3 Scallions
- 1 c Shrimp, Add more if you want
- 1 Egg
- 0.25 Flour
- 1 c Cornstarch
- 0.75 c water, ice cold
- Salt
- Pepper
- Fish sauce
- annatto powder
- vinegar
- thai chili
- Garlic, minced
- Red onion, chopped
- Sugar
- Soy sauce

Preparation of Vegetables and Shrimp
1. Start off by peeling and cutting your vegetables into matchsticks - squash, potato, and carrot.
2. Slice your red onions and scallions lengthwise.
3. Cut your shrimp into small pieces.
4. Combine vegetables with the shrimp in a bowl.
5. Season with salt, pepper, and fish sauce to your liking.
Preparation of Batter
1. Prep your batter by mixing cold water, flour, egg, cornstarch, and annatto powder (optional) together.
Cooking Process
1. Make sure you heat your oil on high heat.
2. Place shrimp and veggie mixture on a plate and gently slide into the oil (Don’t touch it, let it stick together with the batter/oil).
3. Flip after 1-2 min and put it on a cooling rack.
