Ingredients

Bihon Noodles
- 8 oz Bihon Noodles
- 2 Chicken thighs, boneless & skinless
- 1 Chinese sausage
- 3 clove Garlic, rough mince
- 0.5 Onion, julienne
- 1 Carrot, small, julienne
- 1 stalk Celery, sliced thin on bias
- 2 c cabbage
- 4 c water
- 2 tbsp Soy sauce
- 1 tbsp Oyster sauce
- 1 tsp Fish sauce
- chicken bouillon powder
- Black pepper, to taste
- 4 tbsp Oil, separated
- 1 Lemon, wedges (optional)

Directions

Preparation
1. Prep all the vegetables, Chinese sausage, and chicken, and set aside.
Cooking the Chicken and Vegetables
1. Heat a wok on medium high heat.
2. Add 2 tablespoons of oil.
3. Once hot, add the chicken and sauté.
4. Once about 70% cooked, add the Chinese sausage and cook for 1 minute.
5. Add the garlic and onions, and cook for another minute.
6. Add the cabbage, celery, and carrots next.
7. Season with fish sauce and cook for 2 minutes.
8. Turn off the heat and remove the food from the wok and set aside.
Preparing the Noodles
1. In the same wok, add the water, soy sauce, oyster sauce, chicken bouillon, and pepper.
2. Bring to a boil.
3. At this point taste the broth to see if you need to add more seasoning.
4. Next, add the bihon noodles.
5. Let the noodles absorb all the liquid.
6. Be sure to stir every few minutes to help separate the noodles.
7. Once you see the liquid almost all absorbed, add 2 tablespoons of oil, and stir.
8. Once you hear the noodles slightly sizzle, add 75% of the chicken mixture in.
9. Mix and stir fry for 2 minutes.
10. At this point it should be done.
11. You can continue to stir fry longer if you want a drier noodle.
Serving
1. Place the pancit in a serving bowl, then top it with the remainder of the chicken.
2. Serve warm.
3. You can squeeze some lemon juice on the pancit before eating if you like. This is optional.
