- 1 Tbs Olive oil
- 0.5 Onion, chopped
- 0.5 Red bell pepper, chopped
- 150 g Mushrooms, chopped
- 1 Tbs Paprika
- 1 tsp Ground cumin
- 1 tsp ground chili
- pinch Salt
- 0.5 cup Green olives, boneless and in slices
- 1 hard-boiled egg
- 12 empanada wrappers
- 1 Egg, beaten

1. In a large pan, heat the oil and add the onion and bell pepper; cook until the onion is translucent. Add the mushrooms, spices and salt. Mix to incorporate and cook for 5 minutes or until the liquid has evaporated. Remove from the heat and add the olives and chopped egg.
2. Preheat the oven to 220ºC/430ºC
3. Stuff each empanada with two tbsp of the filling and seal the edges with a brush of water. You can use a fork to seal or make the type of fold you like the best. Place on a greased baking tray and brush with the beaten egg. Bake for 10 minutes or until golden brown.
