Main Dish
- 1 tbsp Avocado oil, or cooking oil of choice
- 2 tbsp sofrito
- 1 tbsp stuffed spanish olives
- 2 tbsp red peppers
- 1 tbsp vegetarian bouillon
- 2 tbsp Tomato paste
- 1 tsp Healthy Rican Sazón
- 2 cups cooked gandules
- 0.25 c jasmine or white rice
- 0.5 c chopped carrots
- 0.5 c chopped celery
- 0.5 c chopped onions
- 1 c chopped squash
- 1 c chopped potatoes
- 4 c water
- 1 tsp Healthy Rican Adobo

Preparation of Ingredients
1. Bring a large pot to boil on high/medium heat.
2. Quickly add the oil, sofrito, olives, red peppers, bouillon, tomato paste, and sazón.
3. Stir fry until the sofrito releases its aroma and the ingredients are mixed well.
4. Add the cooked gandules, rice, carrots, celery, onions, squash, potatoes, and water.
5. Mix well, and add the adobo or salt and pepper to taste.
6. Try the liquid to make sure it’s to your liking.
7. Add additional seasonings if preferred at this time.
8. Allow for the liquid to come to a boil.
Cooking Process
1. Cook on medium heat until the vegetables and rice are completely cooked through.
2. Enjoy!
