- 1.5 lb chicken tenders
- 1 Egg
- frying oil
Buttermilk Marinade
- 2 c Buttermilk, 2-3 cups
- 0.5 tbsp Kosher salt
- 0.5 tbsp Paprika
- 2 tsp dried mustard
- 2 tsp Pepper
- 2 tsp Garlic powder
- 2 tsp Onion powder
- 1 tsp Cayenne pepper
- 1 tsp Chili powder
- 0.25 c Hot sauce, (Louisiana, red hot etc)
Seasoned Dry Batter
- 1.5 c Flour
- 0.5 c Cornstarch
- 2 tbsp Kosher salt
- 1 tbsp Paprika
- 1 tbsp dried mustard
- 1 tbsp Garlic powder
- 1 tbsp Onion powder
- 0.5 tbsp Pepper
- 0.5 tbsp Cayenne pepper
- 0.5 tbsp Chili powder

1. In a mixing bowl add buttermilk & everything listed under “buttermilk marinade”.
2. Add your chicken tenders, cover & let it marinate in the fridge for at least an hour.
3. In 2 separate mixing bowls, prep your dry batter.
4. In 1 mixing bowl add 1 cup of flour & 1/4 cup of cornstarch for the unseasoned batter.
5. In the 2nd mixing bowl add 1 1/2 cup of flour and 1/2 cup of cornstarch. Also add all seasonings listed under “seasoned dry batter”.
6. When the chicken is done marinating, remove from buttermilk mixture & place on a baking sheet.
7. Add 1 egg to the buttermilk & mix well.
8. Dip the chicken in unseasoned batter first, shake excess, dip in buttermilk, then dip in seasoned batter. Be sure to squeeze the flour into the chicken.
9. Place chicken on wire rack & repeat until all pieces are coated.
10. In a pot add oil & heat until it reaches 350 degrees.
11. Fry chicken for 5-7 minutes until it’s golden brown or until its internal temp reaches 165.
12. Place cooked chicken on a wire rack & sprinkle with flaky salt.
