Chicken Piccata
- 2 Chicken breasts, filleted in half (so you have four thin breasts)
- 0.5 c Flour
- 2 tsp Salt
- 1 tsp Pepper
- 4 tbsp Butter
- 2 tbsp Olive oil
- 0.333 c Lemon juice
- 0.25 c Dry white wine, (like a Sauvignon Blanc or Pinot Grigio)
- 0.25 c Chicken stock
- 0.25 c Capers, (optional)
- Parsley, for garnish

1. Add salt and pepper to the flour.
2. Dredge your chicken through the flour for a light coating.
3. In a pan on the stovetop, melt 2 tablespoons of the butter with the olive oil over high heat.
4. Add the chicken and cook 3-4 min on each side until golden brown.
5. Remove from heat and set aside on a plate.
6. Add Lemon juice, Chicken Stock, wine and capers (optional).
7. Use a wooden spoon to scrape up all the browned bits from the bottom of the pan.
8. Bring to a light boil and season with Salt and Pepper to taste.
9. Add chicken (and the juices) back to the pan and simmer for about 5 more minutes.
10. Flip chicken half way through.
11. Remove chicken from the pan.
12. Add remaining butter and whisk. Sauce should begin to thicken.
13. Return chicken and garnish with parsley.
