- 12 oz Maitake mushrooms
- 2 wheat-free burger bun
- 0.5 c Breadcrumbs
- 0.5 c plant milk
- 0.25 c arrowroot starch
- 0.25 c oat flour, (third-party certified glyphosate-free oats)
- 1 Jalapenos
- 0.5 c raw cashews
- 1 soft Medjool dates
- 3 tbsp Nutritional yeast
- 0.25 tsp Paprika
- 0.125 tsp Turmeric
- 0.125 tsp Cumin
- 0.25 tsp garlic granules
- 0.25 tsp Salt
- 0.25 c water, adjust as needed
- Substitute Oyster mushrooms for Maitake mushrooms

Required Tools
1. High-Speed Blender.
2. Air Fryer OR Baking Sheet and Parchment Paper.
3. Mixing Bowls.
Step-by-step Instructions][Bread Your Mushrooms
1. Combine arrowroot and oat flour in a bowl.
2. One at a time, dip mushroom pieces into the liquid mixture, then flour mixture, back into the liquid then breadcrumbs. Continue until all pieces are nicely coated.
3. Add breaded mushrooms to the air fryer basket and air fry at 350F for 10-13 minutes or until golden brown. Alternatively, bake at 375F for 20 minutes, flipping halfway.
Prepare the Cheese Sauce
1. Roast jalapeno peppers at 350F for 15-20 minutes.
2. Combine all the ingredients in a high-speed blender. Blend until smooth.
Assemble Your Sandwich
1. Add breaded mushrooms to a bun.
2. Add desired toppings.
3. Pour a generous amount of jalapeño cheese sauce.
